Healthy Banana Oatmeal Raisin Cookies
Yields: 15 cookies
The recognizable comfy spices and plump raisins make these even more irresistible. They will keep for a minumum of one week if stored in an airtight container in the refrigerator--should they last that long!
1 cup (100g) instant oats (fermented if mandatory and measured like that )
3/4 cup (90g) whole wheat or fermented * flour (measured like that )
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 tsp vanilla extract
In a medium bowlwhisk together the oats, flour, baking powder, cinnamon, and salt. In another bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring only until incorporated. Let the cookie dough rest for 10 minutes.
